  1. Red Leaf Grain Amaranth Vegetable Seeds - West Coast Seeds - MU519

Amaranthus tricolor. Also known as Chinese spinach. This heat lover is a very nutritious leaf vegetable. This variety has large, fleshy, pale-green or burgundy and green leaves that can be enjoyed raw in salads. They can also be cooked quickly, faster than spinach. Plant Red Leaf amaranth seeds in early summer in warm soil with good drainage. Enjoy as micro-greens, baby leaf salad greens, or full size cooked greens. The flavour pairs well with garlic and oyster sauce. The plants reach about waist high before flowering in late summer. Be sure to harvest before the flowering stage for the best flavour.

  2. Calypso Bean

Also known as Orca drying bean. This unusual bi-coloured Mexican heirloom has a creamy texture when cooked, and it looks great on the plate. The plants are relatively compact bushes, growing to only 45cm (18”) tall. The beans are easy to grow and fun to harvest. Plant some Calypso bean seeds in the organic vegetable garden and enjoy the dried beans in soups and stews all winter long. The open pollinated seeds are easy to harvest and dry for planting the following year.

  3. Jimmy Nardello Certified Organic

Heirloom Italian frying pepper with incredibly sweet flavour both fresh and cooked. Jimmy Nardello yields an abundance of long, slender, often curled fruit that mature to a dark red colour and hold late in the season when most varieties have faded. Grow Jimmy Nardello once and you will see why it has gained notoriety. Be sure to fry some up to top pizzas, pasta, and eggs!
